Salad Dressings

As summer is here and salad vegetables become more abundant ,you should be able to have a different dressing everyday. Once you have the basic ingredients they can be ‘spiced’ up with many different things. For your basic dressing you will need 4 parts oil to 1 part vinegar. Olive oil is best and you could blend it with other stronger oils such as walnut or toasted sesame. You could use wine vinegars or balsamic or lemon or lime juice. Fresh herbs make a big difference, and putting a good dollop of your favourite mustard in adds flavour. You can make it all up in a jar or an old olive oil bottle, it is then easy to mix...just shake well.You can then store it in the fridge.
