This goes perfectly with the Millet & Potato Tacos!
1 kg ripe tomatoes
2 large onions
1 tbls olive oil
Bunch coriander
2 vegetable stock cubes
Dried chile de arbol
Salt & pepper
1 tbls cidar vinegar
Cook tomatoes in boiling water, then peel them and blend. In a pan heat the olive oil, add chillies and cook for a minute, then blend tomatoes and vegetable cubes. Once cooked add chopped onion, vinegar, coriander & salt if necessary.
Can be served hot or cold.
