Serves 6-8
Ingredients
60g margarine
1/2 kg parsnips
1 1/2 tbs mustard powder
1/2 kg cooking apples
1 litre water
25ml soy sauce
1 tbs caraway seeds
Salt & pepper to taste
Procedure
Melt margarine over low heat. Peel & chop parsnips. Stir in mustard powder than add chopped parsnips. Cover & leave to cook gently.
Meanwhile core & chop apples, add to saucepan with water. Bring to boil, then simmer 5–7 mins.
Blend mixture & add soy sauce, put back in pan add caraway seeds. Season to taste & serve!
