Blackened Butter Beans in Dill
A favourite with one of our members. A simple and tasy way of cooking with dried beans. Quantities are just a guide, adjust according to taste.
250g of dried butter beans
A couple of cloves of garlic, crushed or chopped finely.
Two teaspoons of dill
A liberal splash of soy sauce
Olive oil for frying.
Soak butter beans over night in plenty of water. Change the water and boil for an hour or so- until they are cooked through, but not soft. Warm up the olive oil gently, add garlic and dill, then beans and soy sauce. Cook until dark and a bit crispy, but don't burn.
