This compliments the Cauliflower Koftas really nicely!
A couple of small red onions
A thumbnail of ginger
½ chilli
2 cloves of garlic
½ tsp tumeric
¼ tsp black onion seeds
1 tsp cumin & coriander
Fry everything until soft, adding a tin of plum tomatoes and the same amount of cold water. Add a tsp of salt and cook for an hour, simmering and allowing the mixture to reduce.
Take off the heat and add ½ a block of creamed
coconut. Stir it when back on the heat, whizzing it to make it smooth.
Add the juice of a lemon if required.
